Jacketed Steam Kettle
Does anyone know how to use a pot of steam / steam-jacketed kettle for cooking chocolate?
I've seen people use a steam boiler made by Groen cooking chocolates. They were able to take your time and a scoop of their chocolate candy without burning or stinging. Can anyone tell me step by step how to perform the process? Thanks in advance.
